Performance & Knife Impact

In daily prep work, the bamboo material proves gentle on cutlery. Unlike glass, marble, or titanium cutting surfaces that quickly turn sharp edges dull, this Moso bamboo gives slightly under the blade edge to protect your knives. It also avoids the deep groove gouging common with soft plastic boards, meaning food particles, odors, and bright juices like beet or tomato don't easily soak into the grain or cause permanent discoloration.

Maintenance & Care Requirements

The primary tradeoff compared to plastic is cleanup effort. These boards are strictly hand wash only; placing them in a dishwasher will destroy the bamboo joints. They also need to be wiped dry and stood upright right after washing. Leaving a board damp against a wet countertop overnight can cause dark moisture marks on the underside. Applying food-grade mineral oil every few weeks prevents the bamboo fibers from drying out or cracking.
